Hi All,

I’m just getting started on a new blog at the moment and trying to find my feet in the real world after Masterchef.  It’s been amazing to have all of your support over the past few months, but I’m really looking forward to the exciting future that lies ahead.

I hope you enjoy this blog as it develops. I’d really welcome any feedback you have.  Drop me a line!

    Congratulations Callum on your Master chef success, even though you didn’t quite get over the line in the judge’s eyes you did according to a lot of the viewers. I admire your nerves of steel when put under the pump by the kitchen clock, something I would never endeavor to do. Cooking for me is a pleasure to do in my own free time, I don’t need the added stress as you and all the other contestants went through racing the kitchen clock. I would love to know the recipe you used for the sauce in your 3 chicken dishes in the final, everyone loves a sauce which is classed as a plate licker. I look forward to seeing and hearing more of you here in Adelaide. All the best for your future.

    Hi Callum, I was really pleased to see that you did so well on Masterchef. From the beginning you were very much a favourite of ours. I would love to know whether you are actually going to work in George’s restaurants in Melbourne (or was that just an offer made in front of the TV cameras)?
    I certainly hope that in fact you will be able to work with his top chefs. (You deserve to have the best training).

    For someone so young, you are a credit to your parents!!

    I am so overwhelmed by how great you did in Masterchef.
    For someone so young to come so close to winning such an amazing title is so inspiring.
    I’m only 15 myself, and after seeing you compete in the competition, you’ve inspired me so much to take up cooking as a hobby and I’d never realise how much I truly enjoy it.
    Good luck with the Press Club and you’re going to do so well in the future.
    I look forward to having lunch at your restaurant in the future!

    I want to make the chocolate fondant (who doesn’t!) but the receipe on the
    Masterchef site is missing the step where it tells tou what to do with extra ingredients.

    Congrats on yr recent achievements. I just wanted to let you know and if your family don’t..but maybe they do.. that we have a Hann family tree with a few famous people in there.
    My Aunty Jen is a Hann family geneologist/historian and she lives in South Australia. Please contact me if you would like to have her details or pass my email onto your family.
    There are some excellent chefs amongst us so maybe it is our genes.
    I am a Sth Australian who married a Thiele. My great grandmother was a Hann..that is Jenny’s grandmother.
    Of course we would love to claim you as a relative!

    Hi, Callum!
    I consider you a roll model. You are the youngest out of all the masterchef contestants and still you made it to the Finals. I think you, Marion and Alvin were really the best, but Adam really told the world his skills when he trayed up a personal rice meal in the semi- finals. I think it a bit unfair to be versing someone who has had more expierience and age, but Adam deserved it for all his tremendous efforts…

    Hi Callum, I consider you a roll model as well. I am only 13 and have found it hard to gain confidence in the kitchen. But since MasterChef I have been able to cook Stir Fry and got my own kitchen stuff from my mum. I think you deserved to get into the finals absolutely, you tried so hard and didn’t give up. You have inspired not only me but my friends to get involved with cooking in Home Ec.

    • Hi Renee, thankyou! It’s great to hear you are interested in cooking. I hope your having fun in the kitchen, that’s what it’s all about. I studied home ec in school and had a whale of a time. I would be interested in hearing what dishes your teacher asks you to cook.

Masterchef has never failed to make me drool… I wish the audience could actually taste all that gorgeous food, instead of merely burn with jealousy and want! 😛 I really enjoy cooking myself, but my experimental dishes are yet to turn out as edible…lol… Really enjoyed watching all you awesome cooks at work! 🙂

    Hi Callum.

    Good for you for challenging the foods taught at schools. Cooking cakes and biscuits are not necessary skills for kids to know. However knowledge of how to prepare and to eat healthy fresh food is essential! Don’t let the critics who are trying to maintain the status quo (and their outdated curriculum) get to you. Keep up the good work and you could become the new Aussie Jamie Oliver! Keep in touch with Stephanie Alexander and Maggi Beer. Their schools project is just fantastic. It would be great to see you at the Adelaide Hills Farmers Market (Saturdays 8 – 12) sometime if you can slot that into your busy schedule.

    • I love farmers markets, we have a good one where I grew up in the barossa valley. When I’m back in Adelaide I’ll have to come check it out. Thanks for the support, I’m quite passionate about what we teach the next generation and I would love to get involved with some schools and try and help out. It’s just a matter of finding time at the moment!

    My friends and I have a school project that requires us to interview someone with a passion, the three of us were always a fan of you through out the masterchef series and thought perhaps you would be interested in sharing your passion for food with us? We would love to hear your story of how you got into cooking and why! We chose you not because you were on masterchef but because we all love food and amazing things you can create.     We have been watching Masterchef Australia all the way over here in England – and it’s not reached the final yet but I’ve just ruined it by googling!!! We’re chuffed to find out you made it to the final, we were rooting for you and matthew all the way.
    You’ve inspired us to make macaroons which turned out perfectly after we sieved them about 5 times. If you ever come to England get up to North Yorkshire and go to Bettys for afternoon tea and their macaroons.

    Also – what on earth do you put in the filling of your macaroons? I made lemon ones and had to fill them with lemon curd. The recipe suggested butter cream but I don’t think that’s quite right?!

    I’m from over the ditch. I am a huge fan of Masterchef Australia. I love watching the show especially seeing the amazing dishes you create. We are still airing the season you were on. It is down to the remain 6 I think. Last nights episode was when you all had to create your ‘signature dish’. Unfortunately you didn’t quite complete the plating. I was biting my nails the whole episode. Although I know who wins I still absolutely love watching it. Good luck for your future. Looking forward to seeing what you get up to!

    Just finished watching the final on tv in the UK, you performed admirably and the only advantage that Adam had(great though he is) was experience.
    You were the star of the series,your journey carried the show from beginning to end. Delighted that you recieved the job offer at the end ,hope that it’s going well.
    What a wonderful warm family you have to, I could feel the pride that your mother was feeling for you at the end of the show, you are a fine young man and a credit to her.

    Just watched the final after it was finally shown here in NZ – we’d avoided looking at anything on Internet to maintain the suspense. My wife and I think that, on top of clearly being a first class chef-in-the-making, you appear to be a first class human being as well! Talk about an old head on young shoulders.     Like many others that have left comments before me, I’ve also just finished watching the finale as well – but all the way in Canada! I came across Junior Masterchef online and started to watch the grown up version too. What an amazing journey it must have been for you and the other contestants! It was really wonderful that George gave you such an incredible opportunity in Melbourne, I was genuinely happy for you. Great to see you’re got a blog set up to share all your new culinary experiences, it’s a very interesting read. I’ve never been to Australia but will definitely make a note of all the restaurants I’ll want to go to when I get there! Wish you the very best in your achieving your dreams!     when you made those Sausages in the Finale and you rolled them in Glad Wrap, what temp was the water you put them in to ? and how long for ?
    where is the receipe ?

    • Hi Murray
      In a restaurant kitchen, we use an immersion circulator in a water bath to keep the temperature exactly as we want it (the technique is known as sous-vide which means ‘under pressure’ as the food is vacuum sealed before being immersed). Unfortunately, these immersion circulators are very expensive, so most of us have to settle for a pot of water and a thermometer at home. This is not as accurate, so you want your water around 70-75 degrees, and the time it takes depends on how thick you make you boudin blanc (sausage). Mine took around 12 minutes if I remember correctly. You want them submerged so they cook evenly.

    My husband and I have been obsessed with Australian Masterchef since it has been shown in the UK and it has just finished airing here (we’re both in withdrawal now!)
    It was really fabulous to watch you grow as a chef over the weeks and even when you didn’t quite pull off what you were trying to achieve your passion for food really shone.
    We moved into our own place last year and since then I have discovered a quite ridiculous love of baking! Quite bizarrely most of the recipes I have tried have been Australian, including the brownie from the chocolate gluttony…it’s so good 🙂 Since you were the king of deserts I thought you might like one of my favourite cheesecakes to try. Let me know and I’ll send it to you. (the recipe, not the finished article!)

    Keep up the blog, it’s great seeing what you’re up to now that the hubbub has died down.

    you have been an inspiration to me throughout the series, i’m only 16 and now know i want to be a dessert chef, i never loved cooking before(and never thought i was any good) but after watching you cook i believe i can do it(you are my rolemodel).All throughout masterchef your food looked amazing and i was backing you the whole way!     FoOooOoD. pampering yourself connects restaurants, cafes and bars with food bloggers and twitterers, and also food lovers in general. We identified the trend that people like taking photos of great food, and blog, tweet and facebook (share photos on facebook) about them. You as a great blogger are the best example!

    You have fantastic food-hunting experience and been doing great job blogging about the restaurants (free marketing). Although you do it because of passion, we strongly believe that the restaurants should acknowledge your effort and other food lovers’, for example by giving free meals and great deals. That’s what we do.

    I have been talking to some Top100 Food Bloggers and Twitterers, such as Winsor Dobbin and Jenius. Besides that, we created a facebook page recently. In less than a week, we have got 116 “like”s and our target is to hit 400 by the end of December! Apart from that, we are also gathering content for our website.

    This is the exciting part – our main website concept is to display photos taken by food bloggers. Say we post the photo of your favorite dessert at Rosamond. Food lovers are then attracted by the photo, so they click on it. This will direct them to the page on your blog. In other words, we direct traffic to your blog and provide a platform for food lovers to find out more about great food bloggers. Could you please select 5 – 8 of your favourite articles with photos, so that we could put on our website? We would love to have 3 of your favourite recipes, too.

    Hey dude, I’ve only just got around to watching the final of MC Oz here in UK. (Difficult to keep on top of when it’s on 6 nights a week!).

    Seriously stepped up your game in the final. Shame you lost those points in the early rounds as you’d have won I reckon.

    Good on ya though. Life changing no doubt. I’d rather enter the Oz version of MasterChef compared to the UK one, I know that!

    Hadn’t been interested in cooking ever before, but I have now started to try different recipes and experiment with them by using other ingredients or techniques. Having lots of fun 🙂

    my husband and I just finished watching Masterchef. We are working as seaplane pilots in the Maldives and the show came with a delay. We enjoyed every second of this show and when George announced that you will join his kitchen for a scholarship I was so happy for you. Your style of cooking, your dedication and knowledge, your attention to detail is fascinating. I learned so much from you and during the Masterchef show. You inspired me to learn cooking.     The finals were aired in India yesterday. My mother was rooting for you throughout, she actually cried when you didn’t win. It was really inspiring to see you grown during Masterchef. I am twenty and though I love to cook myself I have a long way to go. I wish I had the guts to sign up for Masterchef Australia.

    In my country the finals were aired today.I watched every second of it though I knew the results from before.I knew Adam would win but I so so so wished the results would change and you would win.I was heart broken when you lost and I am very sorry that your Dad passed away.I knew he would have been very proud of you if he was there.I think you a very good and inspiring cook.You are a winner for me all the time.Watching you love for cooking in me grew and now I am working towards my dream in become a chef like YOU.I took part in a cooking competition and won 1st prize and now I believe I am one step closer to my dream.Anyway,Late Merry Christmas and A very very Happy New Year 🙂

    Hey..

    I am from India and have been following Masterchef. I was thrilled when George offered you the culinary scholarship at The Press Club. I remember the time you guys had a challenge there, you had to run thrice to the supermarket..From then till now, you have shown amazing improvement…the way you cook, it feels like you’re playing with your ingredients and having loads of fun.

    Callum, could you post some easy beginner recipes that don’t need high-tech instruments like the ones you use..I have frankly never seen some of them in my life..

    I’m a 19 yr old girl from India who’s extremely passionate about cooking. However having always followed the academic path (I’m studying for a degree in physics with honors), I have never considered taking up my passion as a profession. But you have really inspired me (I guess we do have a bit in common). Now I’m thinking of trying for the CIA after graduation. Thanks loads. I will be really glad if you keep in touch.     I live in the UK, am a rubbish cook and have no interest in cooking but you and the contestants made even me completely addicted to the show and I suddenly found myself watching every day, I am a puddings fan so you were my obvious favourite on the show.

    You did amazing and was very proud watching, felt like an older sister, cried several times watching you. Congrats and all the best in the future!

    I watched MasterChef all the time with my mum and, with myself at only 15 years old, I found you SO inspiring as you’re so young and you’ve definitely made me believe that I can do anything if I’m passionate and really put my mind to it.

    I’m a chef in Canada. I just got finished watching your season of master chef on youtube. It was fantastic. Took a while, but fantastic. I was chearing for you from the begining and was glad and amazed to see you get so far. I critisized shows like this but the way you grew as a cook and chef through the episodes was great.     Callum, I’m from Manila and I’m a very big fan of yours. I’m real glad that you made this blog. It makes us, fans, feel a lot less distant from you, even if you don’t know who we are. I’m not as passionate about cooking, but I certainly do admire you for being brave enough to quit school for your passion at your young age.     Callum! My soul! You are amazing! I didn’t start watching Masterchef from the beginning but the first 1 I did see, you were cooking alone. And right from then, you became my complete favourite contestant! I was quite sad when you didn’t win, but I’m glad to see that things are going well for you and you haven’t chucked cooking out the window!!

    My Husband and I watched you grow from strength the strength throughout the competition. You made some truly amazing deserts; those macaroons constructed into the shape of the crown jewels- just inspired. We are so pleased to hear about your new adventures and challenges working with Jamie Oliver, you are already an inspiration for many young (and not so young!) budding chefs. I’m going to get my ice cream maker out and try some brown butter ice cream; I don’t think I’ve got what it takes to make macaroons!

      Sorry for the slow reply. Thanks for your kind comments! It’s worth giving the macarons a go; if the worst thing that happens to you in a day is macarons not working out quite right that’s not a bad day!
